urali is a small farm-to-home initiative, from Thrissur to a few neighbourhoods in Bengaluru.

Nendran is bought from farmers around Thrissur, fried by our partner kitchen, and brought straight to your door. There's no distributor, warehouse or shop in between. That's why your chips reach you within two days of frying, not weeks.

We're new, so batches are small and we read every WhatsApp message ourselves. If something isn't right with your box, tell us and we'll make it right.

How a batch is made

The way it's done in Thrissur kitchens before every Onam, for a few more houses.

  1. Green nendran from Thrissur

    Kerala's big plantain, bought green and firm. Ripe ones turn soft and sweet in the oil, so they stay out.

  2. Peeled and sliced by hand

    Sliced right over the urali, so every slice drops into hot oil the moment it's cut.

  3. Coconut oil, nothing else

    That's where the smell of kaya varuthathu comes from. You'll see the oil tin in the batch video we share on WhatsApp.

  4. The salt-water hiss

    Near the end, a splash of salt and turmeric water goes into the oil. The hiss seasons every chip evenly and turns them deep gold.

  5. Cooled, packed, dated

    The chips cool on wide trays and go into sealed pouches the same day. Every pouch is stamped with its fry date.

  6. Overnight to Bengaluru

    The carton rides the night bus. We collect it in the morning and deliver across our four areas in one run.

Chips that sit on a shelf lose their snap. So we don't keep stock. We fry what you reserve, and it leaves Thrissur that night.

A short shelf life, on purpose

With no preservatives added, these chips aren't made to sit in a warehouse or on a shop shelf. They're packed the day they're fried and reach you within two days, so nearly all their crunch is still ahead of them when you open the box.

Once opened, keep them in an airtight jar and finish within a few days. The fry date and best-before date are printed on every pouch.

Why don't I pay when I reserve?

A batch only goes ahead once 40 boxes are reserved. Until then you haven't paid for anything, so there's nothing to refund if your plans change.

What if my batch doesn't fill up?

We message you before orders close. You can move your boxes to the next batch or cancel.

Who's behind urali?

A small team that has just started, working with a partner kitchen in Thrissur. We handle orders, pickup and delivery ourselves, which is why we only cover four areas for now.

How long do I have to pay?

24 hours from when we send the link. After that, your boxes go back into the batch for someone else.

When will my box arrive?

24 to 48 hours after frying. The date stamped on your pouch tells you exactly when your chips were fried.

Will some chips break?

A few, yes. They travel overnight in sealed pouches inside a box, but small breaks happen on the way.

How long do they stay crisp?

Keep the pouch sealed and finish it within three weeks of the fry date. Once it's open, move the chips to an airtight jar and finish them within a few days. There are no preservatives added, so they aren't meant to be stored for long.

Is there any palm oil in them?

No. Both boxes are fried only in coconut oil, including the sharkara varatti.
